Looking for something fun to bake with the kids? These fidget spinner cookies make for a fun and delicious treat.
Ingredients:
2½ cups all purpose flour
¾ cups sugar
¼ tsp salt
1 cup unsalted butter, softened
2 tsp vanilla extract
2 Tbsp cream cheese, softened
Royal icing, any colour
Directions:
In a large bowl, add flour, sugar, and salt and mix together with a wooden spoon until fully incorporated.
Add the butter and mix until the mixture looks crumbly and slightly wet, about 1 minute longer.
Add the vanilla extract and cream cheese, and mix until dough just begins to form large clumps, about 30 seconds.
Transfer dough to a floured surface and knead until it becomes a cohesive ball.
Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Use a fidget spinner as a guide to cut out 12 shapes in the dough and use a clean water bottle cap to cut out 12 circles.
Take the extra dough and roll out again to ½ inch thickness, then use a straw to poke out 12 small pegs that will act as dowels for the fidget spinner cookies.
With the same straw, poke holes in the fidget spinner cookie centres and move it around in a circle, widening the hole to be larger than the diameter of the pegs.
Place all the shapes on a baking sheet and place in the oven.
Remove pegs after 7 minutes, rotate the baking sheet, and continue baking the rest of the cookies for 8 minutes.
Cool cookies completely, then decorate with the icing in whatever colours you would like.
Use royal icing as glue to attach a peg to the backside of one of the small circles. Place the fidget spinner cookie base over the peg and attach the second circle cookie with more icing.
Let all the icing dry before attempting to spin!
