Need a quick 20 minute meal? Vegtable Japchae is a gluten free one pot wonder dish perfect for any meal.
Ingredients:
1 package (250g) sweet potato noodle (Dangmyeon in Korean)
1 small carrot
1 medium onion
6 shiitake mushrooms (Oyster mushrooms or Wood Ear mushrooms)
1 bunch of spinach
Oil
Pinch of Salt
Water
For sauce
3-5 Tbsp soy sauce
2 Tbsp sugar (or brown sugar)
1 Tbsp sesame oil
Directions:
Cut 1 carrot into sticks. Slice 1 onion thinly. cut mushrooms into thin strips.
Boil 2 cups of water in a pot and when boiling, add a bunch of spinach and a pinch of salt for about 5 minutes. Drain and wash with cold water 2-3 times. Squeeze out water and cut into small strips.
In a large pan, boil 5 cups of water and cook 1 package of sweet potato noodles until completely translucent (about 8 minutes). Drain and rinse with cold water. Use scissors to cut the noodles 2-3 times. Put it into a large mixing bowl.
Combine all the sauce ingredients into a mixing bowl and mix well with cooked noodles.
In the same pan, over medium-high heat fry the carrot, mushroom, and onion for about 3-5 minutes. Transfer to the bowl and add spinach.
Mix all together with noodles and put into a bowl to serve.
