Pumpkin Cookie Cake

I have a biased opinion because I LOVE cookies. Combining cookies and cake is a deadly combination and should happen more often. Try out this pumpkin cookie cake for a fall/Halloween recipe to spice up the kitchen.







Ingredients:

  • 1 box, Pumpkin Spice Cookie Mix

  • ½ cup butter

  • 1 large egg

  • 4 tsp water for the icing

  • Black food colouring

  • Halloween sprinkles






Directions:

  1. Preheat griddle to 350˚F. Line an 8” or 9” round pan with foil and spray with nonstick cooking spray.

  2. Stir the cookie mix with the butter and egg until a thick cookie dough forms. Press into prepared pan.

  3. Bake for 22-26 minutes, or until browned around the edges and no longer shiny on top. Cool completely before frosting.

  4. Whisk icing packet and water until icing forms desired consistency. Add 4-6 drops of black food colouring and stir to distribute colour. Frost the cookie cake and then top with Halloween sprinkles.

Serves: 8-10
