Scallion Pancakes

During my time in La Guajira, Colombia, I was able to try many new and delicious foods. Living on the coast, I had access to all types of seafood and tropical fruits. However, one thing that I did miss occasionally was Chinese food from back home. When I would eat out at Chinese restaurants with my family in Toronto, one of the dishes my parents were always sure to order popular among everyone was scallion pancakes. I missed them so much in Colombia I decided to look up a recipe to make them! While this recipe is simple, it can sometimes be challenging to make and may not always turn out as intended, but it feels so worthwhile when they do! These are savoury pancakes that can be enjoyed alone, though they are often served alongside congee, dumplings, or soup. I have tried a few scallion pancake recipes, which always seems to turn out the best for me.


Ingredients:

Dough:

  • 2 cups flour

  • ½ teaspoon salt

  • ½ cup boiling water

  • ¼ cup cool water

Filling:

  • ¼ cup flour

  • ¼ cup oil

  • ¾ teaspoon salt

  • 1 cup green onions (split down the middle and sliced)

Dipping Sauce:

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • ¼ teaspoon sugar

Directions:

  1. In a large bowl, add flour, salt, and hot water. Mix with a fork or chopsticks

  2. Add in the cold water and then knead into a firm ball (about 5 minutes)

  3. Cover the ball and let it rest for 20 minutes

  4. In a small bowl, mix all the filling ingredients.

  5. Once the dough has rested for 20 minutes, cut it into 6 even pieces.

  6. Working with one piece at a time, leave the rest of the pieces covered to prevent them from drying out

  7. Using a rolling pin, roll out the dough into a rectangle ~6x10 inches.

  8. Add about 1 tablespoon of filling evenly, leaving a border around the dough.

  9. Sprinkle about 2 tablespoons of green onions on top

  10. Roll up the dough lengthwise to make a cylinder log, then tucking in one end, roll the log into a flat circle with a spiral-like motion (refer to pictures below if needed)

  11. Finally, use the rolling pin to flatten the pancake until it is about 6 inches in diameter.

  12. Repeat steps 6-11 again for the other pieces.

  13. Use a medium pan for cooking the pancakes and turning the burner on medium-high heat.

  14. Once hot, place one pancake and cover with a lid to cook for a minute, then uncover and flip over to cook for another minute. Uncover the lid and allow the pancake to cook for a little longer or until brown

  15. Cook the pancakes one at a time, and after about 2-3 pancakes, the heat may be needed to be turned down a little to prevent burning.

  16. Once the pancakes are ready, mix all sauce ingredients in a small bowl and slice the pancake into a triangle to make it easier to dip into the sauce.
