A healthy alternative to french fries. Baked sweet potato fries have an added crunch and a sweet soft exterior that are absolutely delicious.

Ingredients:
1 tablespoon olive oil
½ teaspoon paprika
8 sweet potatoes, sliced lengthwise into quarters a
Directions:
Wash and scrub potatoes to remove any dirt.
In a large bowl, mix olive oil and paprika. Add potato sticks, and stir by hand to coat.
Preheat oven to 400°F.
Lightly grease a baking sheet.
Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
Bake in oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.
