Ingredients:
⅓ cup brown sugar
1 tsp ground cinnamon
⅔ cup white sugar
½ cup butter softened
2 eggs
1 ½ tsp vanilla extract
1 ½ cup all-purpose flour
1 ¾ tsp baking powder
½ cup milk
1 apple, peeled and cut into small cubes
Directions:
Preheat oven to 350˚F. Grease and flour 9x5 inch loaf pan.
In a bowl, mix brown sugar and cinnamon.
Beat white sugar and butter together in a separate bowl using an electric mixer until creamy and smooth.
Beat in eggs one at a time until incorporated. Add vanilla extract.
Combine flour and baking powder in a separate bowl. Pour and stir in butter and white sugar mixture.
Mix milk into the batter until smooth.
Pour half of the batter into the loaf pan. Add half of the apples and half of the brown sugar mixture—lightly pat the apple mixture into batter.
Pour the remaining batter over the apple and cinnamon-sugar layer. Top with the remaining apples and brown cinnamon-sugar mixture—lightly pat apples into the batter.
Swirl brown sugar mixture through apples using a finger or a spoon.
Bake in the oven for 30-40 minutes, or until a toothpick inserted into the centre comes out clean.
Let it cool for 5 minutes, then slice and serve.
