A warm and perfect substitution for toast. This is an excellent way to use up those apples that have been hanging around for a while.

Ingredients:
Dry
2 cups flour
⅓ cup of sugar
2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp nutmeg or ground cloves (optional)
1 Tbsp sugar and cinnamon for sprinkling
Wet
¼ cup cubed cold butter
1 cup shredded apple
½ cup milk
Glaze
1 cup icing sugar
1 Tbsp milk
½ tsp vanilla extract
Directions:
Preheat the oven to 425ºF. Mix all dry ingredients thoroughly in a large bowl.
Slice very cold butter into cubes and cut into the flour mixture.
Shred the apple and place it on a few paper towels to soak up some moisture. Add the shredded apple and then the milk. Mix until a soft dough forms. If the dough is sticky, add a bit more flour.
Knead the dough a few times and add some extra flour until the dough is barely sticky and then split the dough into two balls.
Flatten into 6-inch disks. Slice the disks into six pieces.
Place the scones on a lined or greased baking sheet and sprinkle with a sugar and cinnamon mixture.
Bake for 15-20 minutes until the scones are golden brown.
Let the scones cool before drizzling with glaze.
