Banana Bread

Besides being the most delicious thing on the face of the earth this banana bread is also one of the first successful baking adventures I ever had. I have made this banana bread countless times and for almost all of my friends. Everyone who has tried a piece instantly asks for the recipe to the point where I have the original copy of it on my phone so I can send it to whoever wants the recipe.

Ingredients:

  • 1 cup white sugar

  • ½ cup oil

  • 2 large eggs

  • 4 large ripe bananas (2 cups mashed bananas)

  • 3 Tbsp sour cream

  • 1 tsp baking soda

  • 2 cups all-purpose flour

  • optional: 1 cup chocolate chips, chopped pecans, or walnuts

Directions:

  • Mix sugar and oil well with an electric beater.

  • Beat eggs into sugar and oil mix.

  • Mash bananas and beat into sugar / oil / egg mixture.

  • Combine sour cream and soda in a cup and add slowly to mixture while beating with mixer. (Use high setting to get as much air into mixture as possible). Beat well.

  • Add all of the flour and stir in with a spoon. Do not over mix!!!

  • Add in chocolate chips, pecans or walnuts at this point if desired. Either add them in layers or add on top before putting mixture into the oven.

  • Grease and flour pan and pour the mixture in.

  • Bake in a 350°F, pre-heated oven for approximately 55 minutes (cook for longer if needed). Let cool for approximately 15 minutes in a pan and then remove.

Serves: 6-8
