What to show off your love for the garden through baking? Try these lemon thyme cookies. They are classic lemon cookies with hints of thyme that create the perfect combination.

1 cup sugar
2 ¼ cups all-purpose flour
1 Tbsp lemon zest
1 Tbsp thyme leaves, stripped off the stem
Wet
1 cup butter, room temperature
1 egg
1 tsp vanilla
Icing Ingredients:
1 cup icing sugar
1-2 Tbsp lemon juice
2 tsp thyme leaves
1 tsp of lemon zest
Directions:
Cookies
Cream together butter and sugar in a large bowl using a hand or stand mixer for about 3 minutes until fluffy.
Add egg and vanilla, continue to beat for about 2 minutes.
Add lemon zest and thyme leaves and combine until well mixed.
Add in flour a little at a time and mix until just combined. Do not over mix!
Split the dough into two halves, flatten it into disks and cover tightly with plastic wrap. Refrigerate for at least one hour.
Preheat the oven to 350˚F.
Remove one disk from the refrigerator. Roll out dough on a floured surface and ¼ inch thickness. Cut out cookies with a cookie cutter or floured cup rim and place them on a lined baking sheet. Leave 1 inch of space between cookies. Repeat with the second half of the dough.
Bake for 15 to 17 minutes. If your cookies are less than a ¼ inch thick, keep an eye on the cookies and bake for 15 minutes or less. Let cookies rest for a few minutes before transferring to a rack for cooling.
Let cookies cool completely for icing.
Icing
In a small bowl, combine icing sugar with 1 tablespoon of lemon juice. Mix well.
Add more lemon juice or icing sugar to reach desired consistency.
Ice cookies and sprinkle thyme and lemon zest on cookie tops while the icing is wet.
Let iced cookies rest for 1 hour in a cool place.
