One-bowl Chocolate Brownies

This is my go-to brownie recipe, and has a success rate of 100%! Its fudgy texture, richness and perfect sweetness make it too hard to stop at just one piece. If you’re a fan of dark or white chocolate, you can swap them for the unsweetened/milk chocolate chips and the brownies still turn out just as good. Baking (and devouring) these brownies always helps me with my Monday blues!

Ingredients:

  • 1 ½ cups chocolate chips (or chocolate chunks)

  • 1½ cups granulated sugar

  • 1¼ cup flour

  • ⅓ cup cocoa powder

  • 3 large eggs

  • 1 Tbsp vanilla extract

  • 1 tsp salt

Directions:

  1. Preheat the oven to 350˚F.

  2. Add the butter and 1 cup of chocolate chips to a large microwave-safe bowl. Microwave for 1½ minutes, then let sit for 3 minutes before whisking together.

  3. Add the granulated sugar, vanilla, and salt. Whisk to combine.

  4. Whisk in the eggs until fully combined.

  5. Sift the flour and cocoa powder into the bowl and fold in with a spatula. Add the remaining chocolate chips and fold to incorporate.

  6. Line a square baking pan with parchment paper. Spread the batter evenly in the pan.

  7. Bake for 35-40 minutes, until a toothpick inserted in the centre comes out with a few moist crumbs attached.

  8. Let cool completely before cutting.

  9. Enjoy!
