Raspberry Cheesecake Tartlets

Craving cheesecake but do not want to bake a whole cake? These Raspberry cheesecake tartlets are perfect for you then!

Ingredients:

  • 4 oz cream cheese, softened

  • ½ cup sugar

  • 1 tsp lemon juice

  • 1 tsp lemon zest

  • 15 mini phyllo cups, thawed

  • 15 fresh raspberries

Directions:

  1. Place the cream cheese, sugar, lemon juice, and lemon zest into a medium bowl and beat with a hand mixer until smooth and creamy.

  2. Scoop the mixture into a zip-lock bag, then snip off the corner of the bag.

  3. Squeeze cheesecake mixture into each mini phyllo cup and then top with a fresh raspberry.

  4. Keep these stored in the fridge until ready to serve and enjoy!
