Looking for a one pot wonder dinner? Try this taco salad recipe for a fun and filling meal during the week or a substitution for tacos, on Taco Tuesday.
Ingredients:
1 pound ground beef
1 envelope taco seasoning (or spice the ground beef with your regular preferred spices)
1 medium head iceberg lettuce, chopped (about 8 cups)
¾ cup sliced green onions
¾ cup chopped tomatoes
¾ cup pitted black olives
2 cups shredded cheddar cheese
2 cups corn chips, crushed
¼ cup Catalina salad dressing (add more if needed)
Directions:
In a large skillet, cook beef over medium heat, breaking into crumbles. Stir in taco seasoning stirring meat occasionally. Once cooked all the way through, set aside.
In a large bowl, layer lettuce, green onions, tomatoes, olives and cheese.
Top with beef mixture and chips; drizzle with dressing and toss to combine. Serve immediately.
