This is a dish that is frequently made for large gatherings like Thanksgiving and Christmas. This dish comes from my mother’s home country of Barbados.
Ingredients:
1 package (454g) fettuccine pasta or curly macaroni
1½ cup grated cheese (your choice)
1 tsp black pepper
½ tsp salt
1 tsp seasoning salt
1 tsp paprika
1 Tbsp ketchup
1 Tbsp butter
1 egg, beaten
2 tbsp milk
1½ tsp breadcrumbs
Directions:
Boil the pasta in a large pot until desired softness.
Strain the pasta and rinse it under cold water for 30-40 seconds so that it stops cooking.
Preheat the oven to 350˚F.
Transfer the pasta into a mixing bowl and add the seasonings, egg, milk and butter. Stir until mixed, then add half of the grated cheese.
Pour mixture in a baking dish or pan.
Sprinkle the remaining cheese over top of the mixture. Sprinkle bread crumbs over the top of the cheese.
Place in the oven and bake for 20-25 minutes, or until golden brown. Remove from the oven and let cool before serving.
