Barbadian Mac and Cheese

This is a dish that is frequently made for large gatherings like Thanksgiving and Christmas. This dish comes from my mother’s home country of Barbados.

Ingredients:

  • 1 package (454g) fettuccine pasta or curly macaroni

  • 1½ cup grated cheese (your choice)

  • 1 tsp black pepper

  • ½ tsp salt

  • 1 tsp seasoning salt

  • 1 tsp paprika

  • 1 Tbsp ketchup

  • 1 Tbsp butter

  • 1 egg, beaten

  • 2 tbsp milk

  • 1½ tsp breadcrumbs

Directions:

  1. Boil the pasta in a large pot until desired softness.

  2. Strain the pasta and rinse it under cold water for 30-40 seconds so that it stops cooking.

  3. Preheat the oven to 350˚F.

  4. Transfer the pasta into a mixing bowl and add the seasonings, egg, milk and butter. Stir until mixed, then add half of the grated cheese.

  5. Pour mixture in a baking dish or pan.

  6. Sprinkle the remaining cheese over top of the mixture. Sprinkle bread crumbs over the top of the cheese.

  7. Place in the oven and bake for 20-25 minutes, or until golden brown. Remove from the oven and let cool before serving.
