Ingredients:
2 Tbsp olive oil
½ onion diced finely
1 tomato diced
½ cup mushrooms diced
12 eggs
Salt & Pepper, to taste
½ cup shredded cheese
12 small flour tortillas
Directions:
Preheat the oven to 350°F. Oil a 12-cup muffin tin.
Heat a large pan over medium heat. Add the oil, onion, and mushrooms and saute until softened. Season with salt and pepper to taste. Remove from heat.
In the prepared muffin tin, place a small tortilla in each cup and push down until it creates a bowl shape.
Crack one whole egg into each tortilla bowl.
Top with mushroom and onion mixture, tomatoes, and finally shredded cheese.
Bake for 15 minutes, or until eggs are set, tortilla is crispy, and cheese is melted.
Let cool for a few minutes, top with whatever sauce you like, and enjoy!
