Frozen Breakfast Burritos

Breakfast is said to be the most important meal of the day, but our mornings are often sped through in a rush as we prepare for work and school. However, it’s still possible to have a warm, filling breakfast at the start of our busy days if we plan ahead! This is an easy recipe from Tasty.co that I love to prepare on the weekends, so that I can just pop one of these in the microwave on weekday mornings and have a great start to my day.


Ingredients:

  • Bacon (optional)

  • Sausage (optional)

  • 1.5lbs baby red potatoes (chopped into quarters)

  • 1 red bell pepper

  • 1 yellow onion

  • 10 eggs

  • 4 cups shredded cheese

  • 1 bunch of green onion (optional)

  • 6 flour tortillas

  • Parchment paper

  • Salt & pepper (to taste)

Directions:

  1. Start off by cooking the bacon in a large pan over medium heat, until crispy.

  2. Cool the bacon strips on a plate lined with a paper towel to absorb excess oil.

  3. Repeat with the sausage until it is browned and cooked through, and cool the sausage in a bowl lined with a paper towel.

  4. Cook the potatoes, peppers, and onion using the leftover grease in the same large pan, add the potatoes (chopped into quarters) and season with salt and pepper.

  5. Add in chopped peppers and onions, and cook until the potatoes have browned and the peppers and onions have softened. Remove to another bowl lined with a paper towel.

  6. Cook the eggs in the same pan, reduce the heat to medium-low and pour in the beaten eggs. Gently fold and stir the eggs until cooked but still soft and moist. Remove from heat.

  7. Lay out a tortilla on a plate, add the eggs, your other toppings, and finish off with cheese. When satisfied with the fillings, fold both sides of the tortilla in, and then fold the bottom over all the ingredients, rolling up to the top of the tortilla. If the tortillas are tearing, heat a few of them up at a time for 20s in the microwave before wrapping, and avoid putting too many ingredients into a single wrap.

Notes:

  • If you are planning to eat the burritos now, there are no further steps! Otherwise, wrap each breakfast burrito individually in parchment paper, and place the wraps in a 1-gallon freezer bag. The burritos can be stored in the freezer this way for up to one month.

  • To reheat the burritos remove the frozen burrito from the freezer and parchment paper. Wrap the frozen burrito in a damp paper towel, and microwave for 3 minutes. Rest for 1 minute after removing from the microwave, and serve with sauce (ex. Hot sauce, salsa, sour cream) if desired!
