Nothing says classic meal like a grilled chicken with roasted vegetables. This is a quick, filling, and simple recipe that is perfect for any meal.
Ingredients:
1 large zucchini, sliced into sticks
1 large onion, quartered
1 cup whole cherry tomatoes
2 tablespoons olive oil
Salt & pepper, to taste
½ cup mozzarella cheese, cubed
4 boneless skinless chicken breasts
2 teaspoons balsamic vinegar
Directions:
Heat the grill to medium heat and preheat the oven to 425°F.
Combine all the zucchini sticks, onion quarters, and tomatoes in a bowl.
Add 1 tablespoon of olive oil, salt and pepper, and toss to combine.
Spread vegetables on a baking sheet and roast in the oven for 15-20 minutes, stirring halfway. Vegetables should be lightly charred, and the tomato skins will blister and crack.
Once cooked, remove from the oven, toss in the mozzarella cubes, and let them melt slightly.
Meanwhile season the chicken breasts with salt and pepper and drizzle with a little bit of olive oil.
Grill food 4-6 minutes per side, or until cooked through.
Before removing from the grill, brush with balsamic vinegar, then serve with roasted vegetables.
