Lamb Chop Curry

Lamb chop curry is one of the traditional recipes served during Eid-al-Adha. During Eid-al-Adha Prophet Ibrahim who was ordered by Allah to sacrifice his son Ismail. This is why the holiday is known as the “Feast of Sacrifice” and is one of the most important holidays in the Islamic religion.

Ingredients:

  • ¼ cup Vegetable Oil

  • 2.2lbs Lamb Chops

  • 2 large Onions, peeled and diced

  • ½ Tbsp Ginger Paste

  • ½ Tbsp Garlic Paste

  • 2 tsp Salt (or to taste)

  • ½ tsp Crushed Red Chili Powder

  • ¼ tsp Ground Turmeric

  • 2 tsp Ground Cumin

  • 3 tsp Ground Coriander

  • ½ can (200 grams) Plum Tomatoes

  • 145ml Plain Yogurt, beaten

  • Large handful Fresh Coriander, chopped

  • 1 tsp Garam Masala

  • 4 Thick Green Chilies, sliced

Directions:

  1. Take a deep pan with high sides. Place over a medium heat and once hot, add the vegetable oil.

  2. When the oil is hot, add in the lamb chops.

  3. Then, add in the onions, ginger paste, garlic paste, salt, ground turmeric, crushed red chili flakes, ground cumin and ground coriander. Stir together.

  4. Next, in goes the plum tomatoes and the beaten yogourt. Give everything a stir and bring to the boil. Then, turn the heat to the lowest and leave the curry to simmer for 1 hour or until the lamb chops are tender.

  5. Uncover and dry out any excess moisture, if you want. Stir in the garam masala, green chilies and fresh coriander.

  6. Serve with naan, rice or chips
