Personally, I have never been a seafood fan. However, credit again to my mom to finding a salmon recipe that everyone loves. A simple salmon recipe that is great for mid-week meals or when you need something quick to eat. Tastes amazing paired with a bed of rice.

Ingredients:
1 centre cut salmon fillet (1.5-2 lbs)
2 Tbsp maple syrup
1 Tbsp Dijon mustard
1 Tbsp of parsley
1 Tbsp rosemary
4 tsp balsamic vinegar
Salt and pepper to taste
Directions:
In a small bowl, whisk together maple syrup, mustard, parsley, rosemary, salt, pepper.
Spread over salmon to coat.
Bake in a 425°F, pre-heated oven for approximately 15 minutes (or until fish flakes when tested with a fork.
Drizzle salmon with the balsamic and serve!
Serves: 4-6
