Shahi paneer is a Northern Indian delicacy that dates back to the Mughlai rule in India. It is a rich dish filled with spices, paneer and cream that makes it thick, creamy, and spicy to taste. The word Shahi means “Royalty” which explains the origin of the dish since back in the day it was only made for the emperors of the Mughal empire.

Ingredients:
⅓ cup melon seeds, soaked
2 Tbsp butter
1 tsp cumin seeds
1 Tbsp ginger, chopped
1 cup tomato, pureed
¼ tsp turmeric powder
2 tsp coriander powder
2 tsp salt
1 tsp red chili powder
3 chilies, chopped
Crushed paneer
½ cup water
15 paneer cubes
2 Tbsp coriander leaves
2 butter cubes
Directions:
Soak the melon seeds in water for 30 minutes.
Remove from the water and grind them to a smooth paste. Set aside.
In a pan, heat butter. Make sure that it does not burn.
Add cumin seeds. Once they begin to crackle, put ginger in it and cook for a few seconds.
Pour tomato puree and simmer.
Add melon seed paste. Stir well and cook for a minute.
Add turmeric powder, coriander powder, salt, red chili powder and green chilies to it.
Add some crushed paneer for flavour and bring it to a boil on medium flame while adding water to it.
Put the paneer cubes and coat them well with the gravy. Cook for another minute.
Serve hot, garnished with coriander leaves and butter.
