Not sure what to do with your zucchini? Try out these stuffed zucchini boats for a fun and filling meal.
Ingredients:
3 large zucchini, halved and hollowed (reserve 1 cup of the insides)
1 package Uncle Ben’s Bistro Express Tomato & Herb Risotto
¾ cup shredded Parmesan cheese
½ lb raw medium shrimp, cut into thirds
4 slices bacon, cut into small pieces
½ tsp garlic powder
½ tsp dried parsley
Directions:
Broil the zucchini flesh side down on a large baking sheet for 5 minutes.
Remove from the oven, then reduce the heat to 425°F.
Turn zucchini flesh side up in a baking dish and set aside.
Prepare risotto according to package instructions.
Combine the cooked risotto with ½ cup of shredded Parmesan and the remaining ingredients in a bowl.
Divide the filling into each of the zucchini boats and then sprinkle with the remaining Parmesan cheese.
Bake for 20 minutes.
Plate and enjoy!
