Shrimp Stuffed Zucchini Boats

Not sure what to do with your zucchini? Try out these stuffed zucchini boats for a fun and filling meal.

Ingredients:

  • 3 large zucchini, halved and hollowed (reserve 1 cup of the insides)

  • 1 package Uncle Ben’s Bistro Express Tomato & Herb Risotto

  • ¾ cup shredded Parmesan cheese

  • ½ lb raw medium shrimp, cut into thirds

  • 4 slices bacon, cut into small pieces

  • ½ tsp garlic powder

  • ½ tsp dried parsley

Directions:

  1. Broil the zucchini flesh side down on a large baking sheet for 5 minutes.

  2. Remove from the oven, then reduce the heat to 425°F.

  3. Turn zucchini flesh side up in a baking dish and set aside.

  4. Prepare risotto according to package instructions.

  5. Combine the cooked risotto with ½ cup of shredded Parmesan and the remaining ingredients in a bowl.

  6. Divide the filling into each of the zucchini boats and then sprinkle with the remaining Parmesan cheese.

  7. Bake for 20 minutes.

  8. Plate and enjoy!
