Soba Noodles and Chopped Vegetables

A perfect noodle dish that will satisfy all of your cravings. This hearty dish is simple, filling, and very healthy. This dish is quick and simple to make even when you do not feel like cooking.


Ingredients:

  • 2 tablespoons soy sauce

  • 1 tablespoon gochujang

  • 1 tablespoon honey

  • 1 tablespoon sesame oil

  • 1 clove of garlic

  • 1 carrot

  • 2 mini cucumbers

  • 1 bell pepper

  • 1 green onion

  • 3 eggs

  • 3 packs of soba noodles

Directions:

  1. To make the sauce, mix together the soy sauce, gochujang, honey, and sesame oil.

  2. Mince garlic and add to the sauce. Set aside.

  3. Chop the carrot, cucumbers, and bell peppers into strips. Set aside.

  4. Bring a large pot of water to a boil, then add in the soba noodles and cook for 6 minutes.

  5. After 6 minutes, pour the noodles into a colander and rinse with cold water.

  6. Bring a small pot of water to a boil, then cook the eggs for 6 minutes. Let cool, then peel the eggs.

  7. Separate the noodles into three bowls. Add the raw vegetable toppings and the egg. Pour the sauce over the noodles.

  8. Cut the green onion onto the noodles as garnish. Enjoy!
