Ingredients:
4-5 chicken thighs or breasts
1 medium green or red apple
1 pkg of ruby red potatoes
½ red pepper
½ green pepper
½ onion
2-3 Tbsp olive oil
1 tsp black pepper, plus some to taste
1 tsp lemon pepper seasoning
1 tsp salt, plus some to taste
Directions:
Preheat oven to 350˚F and line sheet pan with aluminum foil for easy cleaning.
In a bowl, season the chicken with black pepper, lemon pepper seasoning and salt. Set aside.
Cut onion and peppers into strips and place on the pan. Cut the apple into slices and the potatoes into halves and place on the pan.
Sprinkle the rest of the black pepper and salt onto the vegetables and fruit.
Place the chicken on top of the vegetables and fruit.
Drizzle the olive oil on top of the chicken, vegetables, and fruit.
Bake in the oven for 15 to 20 minutes, keeping an eye on the pan to not let the chicken dry out. Cook time may vary depending on the thickness of the chicken.
Plate and serve warm.
