Tilapia Alfredo Pasta

This pasta recipe is a quick, affordable, and delicious weeknight meal. It's also very flexible. You can substitute tilapia with a variety of different proteins, including tofu, chicken, or salmon.

Ingredients:

  • 2 fillets tilapia, frozen

  • 2 Tbsp olive oil

  • 1.5 tsp paprika

  • ½ tsp cayenne

  • ½ tsp pepper

  • ½ tsp oregano

  • 8 oz uncooked pasta of your choice (Linguine)

  • 3 Tbsp butter

  • 1 onion, diced

  • 1 clove garlic, minced

  • 1 cup Alfredo sauce (homemade or store-bought)

  • ½ cup Parmesan, grated

Directions:

  1. Preheat the oven to 425˚F.

  2. Thaw the tilapia in the microwave or under warm water.

  3. Brush the tilapia fillets on both sides with the olive oil, then place them on a rimmed baking sheet or in a baking dish.

  4. Mix the paprika, cayenne, pepper and oregano together in a small bowl.

  5. Sprinkle about half the spice mix over top of the tilapia fillets.

  6. Cook the tilapia until it is no longer translucent and it flakes easily with a fork (about 10 minutes)

  7. While the tilapia is cooking, place your pasta in a large pot of boiling water and cook until al dente.

  8. In a saucepan, melt 3 tablespoons of butter and cook the onions and garlic over low heat.

  9. When the onions are translucent, add the Alfredo sauce and let it warm up.

  10. Meanwhile, once the tilapia has cooled for a few minutes, use a fork to break it into small pieces.

  11. Once you have drained the pasta, return it to the large pot and add the Alfredo sauce, the tilapia, and the Parmesan cheese. Stir until combined.

  12. Serve immediately. Top with the remaining spice mix if desired.
